Try to spend a day with only eating vegetable but no meat. There is a “no meat day” campaign in Hong Kong promoting the health diet and put less burden on the environment by reducing the carbon footprint generated from eating meat! Try out this easy and perfect veggie supper. It just takes you 30 mins for preparation. The potatoes in this recipe take on the spicy flavors brilliantly


You need the following ingredient:

1 tbsp vegetable oil Half onion, chopped 1 garlic cloves, crushed 350g potatoes, peeled and cut into chunks 2 carrots, sliced 1 parsnips, sliced 1 tbsp curry paste or powder 1 pints vegetable stock 50g red lentils a small bunch of fresh coriander, chopped low-fat yogurt and naan bread or rice, to serve


Please follow the procedures:

  1. Heat the oil in a large pan, put in the onion and garlic to cook over a medium heat and stir occasionally for 4 minutes until softened. Put in the potatoes, carrots and parsnips, turn up the heat and stir until the vegetables are golden, for 7 minutes.
  2. Mix in the curry paste or powder, add in the stock and then bring to the boil. Reduce the heat, pour in the lentils, cover and simmer for 20 minutes until the lentils and vegetables are soft and the sauce has thickened.
  3. Stir in most of the coriander, season and cook for a minute. Top with yogurt and some of the coriander. Serve with naan bread or rice.
